Japanese menus boast a staggering number of options and combinations, it can be difficult to know what it all means. Maki
When most people consider sushi, they are actually thinking of what the Japanese call maki. Maki begins with sticky rice rolled in seaweed and layered with fish or vegetables. Maki is served both raw and cooked.
Sometimes you’ll see rice on the outside, known as uramaki. When it is all scooped into what is known as a nori cone (or dried seaweed), it is called the maki. Some of our favorite and most popular Maki Rolls are the California Roll, Philadelphia Roll, and the Spicy Tuna Roll.
Nigiri
In Japanese, the word nigiri is translated as “two fingers”, referring to the rice portion size. Although Nigiri consists of rice and fish, it isn’t rolled in the same way as maki. Instead, a thin slice of cooked or raw fish is layered on top of a small mound of vinegar rice. Traditionally, a tiny dab of wasabi is placed between the rice and the fish. In other cases, nori, or toasted seaweed strip, is placed between the rice and the fish.

Sashimi
While you may find Sashimi commonly in the Sushi section of Japanese restaurant menus, it actually isn’t a sushi at all! In traditional Japanese culture, sushi isn’t considered sushi unless it contains rice. Sashimi, is the simple preparation of sliced fish, served without other ingredients such as rice.
