What are they made from?
Egg Noodles
Egg noodles are made from...you guessed! Eggs! Also wheat flour, a little salt, and water. Egg yolks give the noodles their unique coloring. Factory made egg noodles also often contain an agent that increases the PH level of the noodles, but they have the same texture and elasticity as homemade noodles.
Rice Noodles
Depending on the restaurant, rice noodles are made from different rice varieties including brown, white, and red rice. At Pho V, all of our noodle soups are garnished with green onion, white onion, and cilantro. We serve them with bean sprouts, jalapeno peppers, lime, fresh basil, and your choice of protein!
Sometimes tapioca and cornstarch are added to improve the satisfying, gummy texture of rice noodles. Aside from their great texture and flavor, rice noodles are gluten-free.
How are they prepared?

Egg noodles are awesome for stir-frying because they stand up to the heat of a wok. We think thin egg noodles are perfect for stir-fry, whereas thick egg noodles lend themselves better to saucy dishes.
