It’s in the name, Pho V Noodle House and Sushi. One should expect noodles. But did you know Vietnamese noodles were served in such variety? So many different ingredients, shapes, textures, and sizes. Come try noodles in Bedford.

So Many Noodles

Reading through the menu you’ll see the following:

·        Rice Noodles – flat or Bahn Pho, for Pho and pronounced “Fuh.”

·        Rice Noodles – thin or Vermicelli

·        Rice Noodles – thick for soups

·        Egg Noodles – Mi in several shapes, also made with flour. Sometimes crispy, sometimes soft

·        Wheat flour noodles – Japanese Udon is an example

A Google search indicates that this selection may only be the tip of the iceberg! Noodles and their counterpart, rice serve as the base to many Vietnamese dishes.

Pho

Pho, the seeming icon of Vietnamese food in America, is made with rice noodles called Banh Pho. The noodles are flat. Pho, by the way, pronounced “fuh,” and is served in many combinations.

Pho V is fortunate to be one of the only local restaurants serving Curry Pho. It is beautifully fragrant, unique and something customers often actually take the time to write reviews about.

If you don’t happen to live in Bedford, you might still want to consider making the trip to give this wonderfully seasoned Curry Pho a try.

Stir-Fried Noodles

The Pho V menu has a page dedicated to four types of noodles. You choose your noodle which is already paired with a sauce. And then you also select your preferred protein. Such a variety of noodles in Bedford!

The noodle choices are:

Flat Noodle Stir-Fried – Flat noodles are a white, lush noodle. Thin and wide-cut, made with rice flour and water. Then stir-fried with your choice of meat, seafood or tofu in a rich brown sauce.

Soft Noodles Stir-Fried – This traditional fresh egg noodle is thin and a slimmer cut, made from wheat flour and egg then stir-fried in a rich brown sauce with your selection of protein.

Udon Noodle Stir-Fried.- Udon noodles are thicker and chewier. They’re are made from wheat flour, salt, and water and also get mixed with a rich brown sauce. You add protein if desired.

Crispy Egg Noodles are, as you would guess, egg noodles fried until crunchy and these are served at Pho V with a rich white gravy-like sauce and your choice of protein.

More Noodles!

Soups at Pho V seem to have three different noodles in various broths. The Vietnamese names are not included in the descriptions, but the noodle options listed include thick rice noodles, crystal noodles, and egg noodles.
